2 Tablespoons olive oil
1 can tuna (brine or oil, your choice), drained
1 jar marinated artichoke hearts
2 Tablespoons capers, drained

Heat skillet over medium heat, add olive oil. Add onions, (break them apart a little, they cook faster and better that way) stir and cook slowly without browning or frying edges. You want them to cook down and turn golden and transparent. Once onions are cooking, boil some water and cook pasta shapes (spirals work really well), drain and toss with a splash of oil so it all doesn't stick together.
Once onions are cooked, add tuna, artichoke hearts and capers. Heat through. In a large bowl, toss pasta and sauce together and serve!
Top it with some freshly grated parmesan, and it's heavenly.
Dinner: Japanese Salmon Salad
3 salmon filets (works fine with more or less, scale accordingly)
1/4 to 1/2 cup of rice vinegar
2 T wasabi paste (not powder)
2 t dark miso paste
2 T finely grated ginger
Mix marinade ingredients together, pour on top of salmon filets in an appropriately sized pan. Marinate for as long as ya can, anywhere from 1 to 4 hours. Save marinade.
Heat up cast iron skillet on high heat, til almost smoking. Put salmon on skillet (careful, it'll spatter), keep an eye on it so it won't burn, cook to your level of doneness. Cook each side only once tho. And when you turn over the filet, put it on a new patch of pan, cause that patch will be as hot as the first place you put the salmon down.
In the meantime, pour off marinade into a saucepan to boil down to a thickened sauce.
At the same time, cook some frozen spinach using your favored method (microwave/stovetop) til ready.
Also, prepare some rice/bean/cellophane noodles to package directions, have 'em waiting when the salmon is done. These only take a few minutes to make, most of the time they sit in hot water for about 3 minutes, and then rinse in cold and they're done.
Now comes assembly. I thought of tossing noodles and spinach together. Could do that, or just have them in separate parts of the plate. But pour a little sauce over the fish (and the noodles, if you like the sauce). And voila, dinner.
